Whether for breakfast, brunch, or lunch, Chef Chris Moran’s Primavera Egg White Omelette is the perfect light summer dish. In minutes you can sit down to a healthy and delicious meal made with julienne vegetables and asiago cheese served with market greens. You can make it yourself at home by following Chef Moran’s demonstration, or visit Trafalgars Bistro for the full summer experience of dining in the shade of the patio “vineyard” section under an awning of grape vines, or catching rays at a south-facing patio table in the sun. The house sangria is as refreshing as it is colourful, garnished during the summer season with plump local raspberries, blackberries and blueberries.

In the evenings, gather on the patio for Trafalgars’ new appetizer of brandy and apple cider fresh steamed mussels with leeks and pancetta. Or try the chef’s colourful new dish of fresh crab and sea asparagus stuffed in an inari pocket served on a bed of cold rice noodles made brilliant with dabs of fresh beet paint. These Ocean Wise dishes are proudly served under the umbrella of the Vancouver Aquarium’s conservation program.
